Cooking Up Good Eats Since 2023

Restaurant owners Mayra Almaraz Trejo and Scotty Parrent, who had vastly different restaurant experiences, cuisine knowledge, and culinary skills, opened the doors to the Shed Kitchen on May 3rd, 2023. 

Mayra was born into a large family in Guanajuato, Mexico and moved to the U.S. at a young age. With her mother to credit for her culinary beginnings, she began pursuing a career in kitchens. Scotty, from a small town in Montana, started as a busboy at a local diner. He made his way to Connecticut to work at an exclusive country club. Years later, the two would cross paths working managerial positions at Chipotle in New Jersey. They both had a passion for comfort foods, the ones that always seem to be just alright everywhere you go. 

 

After one too many mediocre dining experiences, the two decided to collaborate to recreate their restaurant favorites. From classic smash burgers to elevated duck fat cooked chicken sandwiches, they found the flavors that trumped even their favorite restaurants. Mayra and Scotty worked to break each element down to its fundamentals and meticulously found the perfect balance of flavors and textures. After discovering their niche in the culinary scene, they began serving their grub at a pop-up on the Sidecar patio. With enough traction and loyal customers, they opened The Shed Kitchen right next door to Sidecar. Now, they serve bar patrons, hungry locals, and vacationers looking to get off the beaten path.
